A touch of sweetness, with the nutty deliciousness of whole wheat flour, mellow vanilla and fresh cherries (which are cheap right now).
1 c all-purpose flour
1 c whole wheat flour
1/2 c sugar (more or less to taste)
1 tbs. baking powder
1/2 tsp. salt
3/4 tsp. cinnamon
1/2 tsp. vanilla extract
1 c coarsely chopped & pitted cherries (a little more if you snack as you cook)
1 egg
1/2 c milk
1/4 c (4 tbsp.) butter, melted
Mix dry ingredients together and add cherries; mix well. Beat wet ingredients with a wire whisk until well-blended. Stir wet ingredients into dry ingredients until well-moistened. Spray muffin tin with Pam or use paper cups; fill up about 2/3 with delicious, delicious batter. Don't eat too much batter or you won't have 12 muffins.
Bake for about 23 minutes at 375 F.
Grab friend, grind whole bean Peet's, brew and pour coffee, sit down on porch, and NOM.
